Orange Flavored Beef Jerky | Commercial Dehydrators

If you are craving Chinese takeout, this flavorful jerky has all the taste of a Chinese classic and can stay fresh for a month in the refrigerator. The jerky can also be frozen for up to several months.

Ingredients
  • 3 pounds lean beef, trimmed of all fat and sliced into strips 1/8 inches -3/8 inches thick
  • 3 oranges, (2 peeled and juiced, and 1 zested)
  • 3 Tbsp. soy sauce
  • 3 Tbsp. rice vinegar
  • 2 Tbsp. sugar
  • 3 Tbsp. sesame oil
  • 1 1/2Tbsp. toasted sesame oil
  • 1 tsp. Asian chili-garlic paste
  • 2 Tbsp. fresh ginger, grated

(per 1-oz serving): Calories: 61, Sodium: 16 mg, Dietary Fiber: 0 g, Total Fat: 1.6 g, Total Carbs: 4.3 g, Protein: 7.3 g.

Instructions
  1. Place all the ingredients, except for the beef, into a blender and process until smooth.
  2. Pour marinade over meat and mix.
  3. Keep marinated meat in refrigerator overnight.
  4. Remove from refrigerator and let meat come to room temperature.
  5. Lay meat on dehydrator sheets in a single layer.
  6. Dehydrate at 145-160 degrees for 6-10 hours.

Spicy Ginger Jerky | Commercial Dehydrators

I love using this marinade with flank steak but it also works with pork and fish. Grinding the meat will give the jerky a different textureless tough and easier to chew. You'll need a jerky gun for this. It works much like a pastry bag (which you can use instead), in that you fill it with the ground meat mixture and can then squeeze it out into thin strips or sticks in a uniform manner, making a more attractive jerky stick.
