These fragrant, soft cookies will be requested even by those who are not on a raw food diet. The lemon flavor is refreshing and subtle. For more citrus taste, you can add the zest of one lemon to the batter. The batter tends to be wet so if it is too difficult to handle, add more coconut.

Ingredients
  • 2 cups almonds
  • 2 cups unsweetened coconut flakes
  • 6 Tbsp. lemon juice
  • 1 tsp. vanilla extract
  • Dash of cinnamon
  • 1/4 cup maple syrup

Instructions
  1. Place almonds in the food processor and pulse until a flour-like consistency develops.
  2. Add coconut and process with the ground nuts. Add the lemon juice, (zest if using), vanilla extract, cinnamon and maple syrup.
  3. Scoop out batter into mini-balls and latten. Place on dehydrator sheets and dehydrate for 8 hours at 115 degrees for a chewy texture.
