Ingredients
  • 2 cups oat groats (or rolled oats)
  • 2 cups of dried apricots
  • 1 cup shredded coconut, unsweetened
  • 1/2 cup grated fresh apple (2 medium-size apples)
  • 1/2 cup pitted dates, chopped coarsely
  • 4 tbsp coconut oil
  • 2 tbsp coconut nectar (or pure maple syrup)
  • 1 tsp natural vanilla extract
  • 1 tsp grated lemon zest
  • Pinch of sea salt

  1. Add all ingredients into a food processor; fix in the blade; pulse to combine well.
  2. Pour the blended mixture into a large bowl; use your hands to work on mixture and mold into balls. Add additional flavors to taste. Add extra sweetener or lemon zest if desired.
  3. Mold dough into medium-sized cookies; place on dehydrator sheets. Place in a dehydrator and dry cookies at 100°F for 12 to 15 hours or until desired cookie state is achieved.
