- 1/2 cup dehydrated shredded zucchini
- 2 tablespoons dehydrated sliced onions
- 1 cup boiling water
- 6 large egg whites
- 1/4 cup cubed feta cheese
- Salt and black pepper
- In a small heatproof bowl, combine the dehydrated zucchini and onions. Pour the boiling water over, cover, and let sit for 5 minutes to rehydrate. Drain off any remaining water.
- In a medium bowl, whisk the egg whites, then beat in the rehydrated vegetables and feta.
- Spray a small skillet with cooking spray. Place over medium-low heat for a minute. Pour in the egg mixture and cook until firm underneath. Loosen from the pan, flip over, and cook the other side. Season with salt and pepper to taste.
