- 1 & 1/2 cups uncooked long-grain white rice
- 1 cup dehydrated corn kernels
- 1 cup dehydrated sliced tomatoes
- 1/4 cup dehydrated mixed chopped red and green bell peppers
- 2 tablespoons dehydrated sliced green onions
- 2 dehydrated garlic slices, crushed
- 1 teaspoon ground cumin
- 4 cups chicken broth
- 2 & 1/2 cups water
- 1 cup shredded cheese of your choice
- 1. Combine all the ingredients except the cheese in a 6-quart slowcooker, cover, and cook on HIGH for 3 hours.
- 2. Remove lid, stir in the cheese, cover, and cook until the cheese ismelted and bubbling, about another 30 minutes.
