- 4 cups cooked long-grain rice, cooled
- 2 cups dehydrated mixed shredded red and green bell peppers
- 1 cup dehydrated sliced tomatoes
- 1 (16-ounce) can kidney beans (do not drain)
- 1 (16-ounce) can tomato sauce
- 1 large egg
- 1 teaspoon chili powder
- 3 cups boiling water
- Preheat the oven to 350°F. Spray a 9 x 13-inch baking pan with cooking spray.
- In a large bowl, combine all the ingredients until well mixed. Pour into the baking pan and bake until golden brown, about 45 minutes.
