Pineapple Bread Pudding | Commercial Dehydrators

  • 1 cup dehydrated chopped pineapple
  • 3 cups boiling water
  • 1 cup sugar
  • 1/2 cup (1 stick) butter
  • 4 large eggs
  • 1/2 cup milk
  • 4 cups cubed (1-inch) fresh white bread

  1. In a heatproof medium bowl, combine the pineapple and boiling water, cover, and let sit 15 to 20 minutes to rehydrate. Drain off any remaining water.
  2. Preheat the oven to 350°F. Spray a 10-inch square baking pan with cooking spray.
  3. In a medium bowl, beat the sugar and butter together until creamy. Add the eggs, one at a time, beating well after each. Stir in the pineapple, then the milk.
  4. Spread the bread cubes over the bottom of the baking pan. Pour the pineapple mixture over the bread. Bake until it puffs up and turns golden brown, about 1 hour. Enjoy warm or cold.
