Instructions
  1. Heat the oil in a small skillet over medium heat. Add the chicken breast and cook all the way through, turning several times. Remove from the heat. When cool enough to handle, cut into 1/2-inch cubes.
  2. Place the spinach, onion, lemongrass, lemon juice, rice, broth, and chicken in a large saucepan, cover, and bring to boil. Reduce the heat to a simmer and cook for 30 minutes.
  3. Ladle the soup into 6 bowls and float 1 dehydrated lemon slice on top of each as a garnish.
