- 2 cups dehydrated spinach leaves
- 1 & 1/2 cups dehydrated shredded potatoes
- 1/4 cup dehydrated sliced mushrooms
- 1 teaspoon crushed dehydrated garlic
- 1/2 teaspoon crushed dehydrated dill
- 2 & 1/2 cups boiling vegetable broth or water
- 6 large eggs
- 1/4 cup milk
- 2/3 cup shredded mozzarella cheese
- Preheat the oven to 350°F. Spray a 10-inch square baking dish with cooking spray.
- In a medium bowl, combine the dehydrated spinach, potatoes, mushrooms, garlic, and dill. Pour the boiling broth over, cover, and let sit until the broth is absorbed, about 10 minutes. Transfer the mixture to the baking dish.
- In a small bowl, beat the eggs and milk together and pour over the vegetables. Lightly fold everything together. Sprinkle with the mozzarella and bake until cooked through, the cheese is melted, and the top is a light golden color, 20 to 25 minutes.
