Ingredients
  • 6 dehydrated whole portabella mushroom caps
  • 1 cup ginger ale
  • 2 tablespoons firmly packed brown sugar
  • 1 tablespoon salt
  • 2 teaspoons dry mustard (like Colman's)
  • 1 teaspoon liquid smoke
  • 1 teaspoon cayenne pepper
  • Olive oil

  1. Place the dehydrated whole mushroom caps in a large ziptop plastic bag.
  2. In a small bowl, whisk the remaining ingredients except the olive oil together, then carefully pour over the mushrooms in the bag. Squish everything around to coat, then seal the bag and refrigerate overnight.
  3. Remove the caps from the marinade and coat each with olive oil.
  4. Grill the caps over low heat until tender and they have nice grill marks, 4 to 5 minutes per side.
