- 1/2 cup dehydrated chopped tomatoes
- 1/4 cup dehydrated chopped onions
- 1/4 cup dehydrated chopped green bell pepper
- 1/4 cup dehydrated chopped yellow bell pepper
- 1/4 cup dehydrated chopped parsley
- 1 & 1/2 cups bulgur
- 1/4 cup lemon juice
- 3 tablespoons olive oil
- 4 & 1/2 cups boiling water
- 1 (16-ounce) can red kidney beans (drained and rinsed)
- 1 cup small cubes feta cheese (optional)
- 1/2 cup pine nuts
- In a large heatproof bowl, combine the dehydrated ingredients, bulgur, lemon juice, and oil. Pour the boiling water over and cover. Let cool to room temperature, then refrigerate overnight.
- Stir in the beans, feta (if using), and pine nuts just before serving.
