- 2 cups dehydrated sliced red potatoes (with skins on)
- 1 cup dehydrated cauliflower florets
- 1 cup dehydrated cherry tomato halves
- 1/2 cup dehydrated peas
- 1/4 cup dehydrated chopped onions
- 1 tablespoon coarsely ground dehydrated ginger or 1 teaspoon store-bought ground ginger
- 1/2 teaspoon ground cumin
- 1/2 teaspoon coriander seeds
- 4 dehydrated garlic slices, crushed
- 4 cups vegetable broth
- 4 cups water
- Place all the ingredients in a 6-quart slow cooker, stir to combine, and cover. Cook on LOW for 5 to 6 hours.
