- 1 & 1/2 cups Italian-Style Tomato-Garlic Bread Cubes
- 3/4 cup mayonnaise
- 1/2 teaspoon powdered dehydrated tomatoes or tomato puree
- 8 boneless, skinless chicken breast halves
- Preheat the oven to 400°F. Spray a 9 x 12-inch baking dish with cooking spray.
- In a blender, grind the bread cubes into crumbs.
- Place the crumbs on a large plate. In a large shallow bowl, whisk the mayonnaise and tomato powder together.
- Place the chicken in the bowl with the mayonnaise and turn to coat the pieces evenly. Take each piece of chicken and dredge it evenly in the crumbs. Place the chicken in a single layer in the baking dish. Bake until the juice runs clear at the thickest part of each piece of chicken, 35 to 40 minutes.
Variation: This recipe also works very nicely when made with fish fillets instead of chicken. Adjust the cooking time, which should be shorter for the fillets.
