Ingredients
  • 3/4 cup dried corn
  • 3 cups of boiling water
  • 2 tablespoons butter, melted, cooled slightly
  • 2 eggs, beaten slightly
  • 2 tablespoons onion, chopped
  • 2 cups light cream

  1. In a saucepan, add corn to boiling water then let stand for 20 minutes.
  2. Simmer the corn for about 1 hour, or until tender. Drain off the excess water.
  3. Preheat your oven to 325°F. Generously grease a 1 quart casserole
  4. In the saucepan, combine corn with butter, eggs, onion, light cream, sugar, salt and pepper. Pour into the prepared casserole.
  5. Bake for about 35 minutes or until a knife comes out clean when inserted in the center.
