- 2 cups dehydrated refried beans
- 1/4 cup dehydrated chopped green chile or bell peppers
- 2 tablespoons dehydrated chopped tomatoes
- 1 tablespoon dehydrated chopped onion
- 1/2 teaspoon crushed dehydrated jalapeño (optional)
- 2 & 2/3 cups boiling water
- 1/2 cup shredded mozzarella cheese
- In a large bowl, toss the dehydrated ingredients together, pour the boiling water over, stir, cover, and let sit for 20 minutes to rehydrate.
- Stir again. At this point you can cover and refrigerate for at least 30 minutes (it will thicken more in the refrigerator).
- Pour the mixture into a microwave-safe baking dish, sprinkle with the mozzarella, and microwave on HIGH until hot all the way through and the cheese has melted, 1 to 2 minutes.
