- 1 cup dehydrated broccoli florets
- 2 cups boiling water
- 1/4 cup dehydrated chopped carrots
- 2 tablespoons dehydrated diced onions
- 2 tablespoons dehydrated chopped celery
- 1 teaspoon dehydrated garlic, crushed
- 1/4 teaspoon dehydrated thyme
- 4 cups chicken broth
- 2 cups shredded Swiss cheese
- 1 cup plain yogurt
- Place the broccoli in a heatproof bowl and pour the boiling water over. Cover and let sit for 15 minutes to rehydrate.
- Combine the carrots, onions, celery, garlic, thyme, and broth in a medium saucepan. Cover, bring to a boil, reduce the heat to a simmer, and cook for 20 minutes.
- Remove the pan from the heat and gently stir in the cheese and yogurt until melted and well mixed. Add the broccoli with any remaining soaking water, stir lightly until mixed, cover, and simmer for another 20 minutes.
