Carrot Cake | Commercial Dehydrators

This carrot cake is the best you will ever taste! With its outstanding spice flavor, super moist crumb, and velvety cream cheese frosting, it's guaranteed to be a hit at any occasion.

Ingredients
  • 4 eggs
  • 2 cups sugar
  • 1/2 cup cooking oil
  • 2 cups plain flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 cup chopped walnuts
  • 1 1/2 cups dehydrated finely grated carrots, re-hydrated, well-drained

Frosting:

  • 2 (8-ounce) blocks cream cheese, room temperature
  • 2 (16-ounce) boxes confectioner's sugar
  • 1 teaspoon vanilla

  1. In a large bowl, whisk together the eggs, sugar and oil.
  2. Fold in flour, baking soda, cinnamon and salt.
  3. Use your had to mix in the walnuts and carrots. Transfer batter to a 9"x 12" baking pan.
  4. Bake for 45 minutes at 350°F.
  5. Make the frosting: Mix together the cream cheese, sugar and vanilla.
  6. When the cake is done, immediately spread the top with half of the frosting. Let cool completely then frost it with the remaining frosting. Place in the refrigerator.
