- 1/2 cup dried black-eye peas
- 1/2 cup dried northern beans
- 1/2 cup dried kidney beans
- 1/2 cup dried red small beans
- 1/2 cup dried pinto beans
- 1 tablespoon dried celery
- 3/4 cup corn bark
- 1/3 cup dried diced onions
- 1/2 cup dried mixed vegetables (carrots, corn, green beans, peas)
- 1/4 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon of crushed red pepper
- 1/8 teaspoon black pepper
- Bring 5 cups of water to a boil. Add all the dry ingredients and let soak for 15 minutes.
- Add chicken broth and the seasonings then bring to a boil on medium heat.
- Let it boil for 5 minutes then reduce to low heat and allow to simmer for 30 minutes.
- Scoop about 3-4 cups of the soup (with solid ingredients). Blend until smooth then stir back into the soup. Simmer for a few minutes more and it is ready to serve.
