Ingredients
  • 1/2 cup dried black-eye peas
  • 1/2 cup dried northern beans
  • 1/2 cup dried kidney beans
  • 1/2 cup dried red small beans
  • 1/2 cup dried pinto beans
  • 1 tablespoon dried celery
  • 3/4 cup corn bark
  • 1/3 cup dried diced onions
  • 1/2 cup dried mixed vegetables (carrots, corn, green beans, peas)
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon of crushed red pepper
  • 1/8 teaspoon black pepper

Instructions
  1. Bring 5 cups of water to a boil. Add all the dry ingredients and let soak for 15 minutes.
  2. Add chicken broth and the seasonings then bring to a boil on medium heat.
  3. Let it boil for 5 minutes then reduce to low heat and allow to simmer for 30 minutes.
  4. Scoop about 3-4 cups of the soup (with solid ingredients). Blend until smooth then stir back into the soup. Simmer for a few minutes more and it is ready to serve.
