  1. Melt the butter in a medium skillet over medium-high heat. Add thechicken and cook until it no longer looks raw.
  2. Combine the remaining ingredients except the blue cheese in a 6-quart slow cooker. Add the chicken and stir to combine. Cover and cook on LOW 6 to 8 hours or HIGH for 4 hours.
  3. Serve in bowls, topped with a sprinkling of blue cheese.
