- 1/2 cup dehydrated broccoli florets
- 1/2 cup dehydrated sliced mushrooms
- 1/4 cup dehydrated roasted red bell pepper strips
- 1/4 cup dehydrated chopped onions
- 4 cups boiling water
- 6 large eggs
- 2 & 1/2 cups milk
- 1/4 cup (1/2 stick) butter, melted
- 2 cups shredded cheddar cheese
- 3 plain bagels, cut into 1-inch cubes
- Preheat the oven to 350°F. Spray a 10 x 12-inch baking dish with cooking spray.
- In a medium heatproof bowl, combine the dehydrated ingredients. Pour the boiling water over, cover, and let sit for 15 minutes to rehydrate. Drain off any remaining water.
- In a large bowl, beat the eggs, milk, and butter together until smooth. Fold in the cheese, bagels, and rehydrated ingredients. Pour into the baking dish and bake until cooked through and the top turns golden, about 50 minutes.
